Peanut Butter Honey Bee Balls

The Book Before You Cook…
Little Bee: Finger Puppet Book by Chronicle Books
Summary: Cutest little board book that your little one can put his finger in and move the bee finger puppet.
When It’s Time to Cook…
You’ll Need:
- 1 1/2 cups of quick oats
- 1/2 cup peanut butter {you can also use 1/4 cup peanut butter and 1/4 cup almond butter}
- 1/2 cup honey
- 1/4 cup flour {we used whole wheat}
- 2 Tbsp ground flax seed
- 1/4 cup chocolate chips
- 1 tsp. coconut oil {or vegetable oil}
- slivered almonds
- To Make:
- Combine the peanut butter and honey together.
- Mix in the oats, flour and ground flax seed until well mixed.
- Shape into balls and place on plate.
- Melt the chocolate chips and oil in the microwave for 1-2 minutes {do this in 15 second spurts}. Stir chocolate until smooth ~ when it drizzles well you are ready to use it!
- Drizzle chocolate over the balls to make stripes for your honeybees.
- Use two slivered almonds as wings for your bees.
- Chill in the refrigerator until firm.
{Makes about 2 dozen}
Alternative: We also make these without the chocolate stripes and roll them in coconut flakes instead ~ yummy!

My girls would love making these! I don't have flaxseed though, I wonder if it's possible to leave it out??
I just made these, came our great! I did add mini chocolate chips for eyes and a stinger (my 4yr old insisted they needed both!)
